Making More In My Kitchen

With the kids home because of school holidays, its very important to have the cupboards full with baking. It stops the temptation to buy things we don't need, and makes great bribes (I mean encouragement hee hee) to behave and be helpful. Yes even the teen boys :)
I started with making Afghan biscuits, don't need a lot of ingredients for these. A great use for our walnuts :)

Next Gingerbread Men, DS8 helped with the icing. Next time will make car ones. As DS8 does like his Gingerbread cookies :)

Then I made Feijoa Jelly. This is my first time, and I was please to see it's as easy as making Crab Apple Jelly. A great use of fruit that kids weren't eating (the small sized feijoas, that a teaspoon don't fit). Now I know they will eat on pikelets and scones (with some fresh whipped cream YUM!)

Look at those beautiful Autumn colours. Feijoa and Crab Apple Jellies make a pretty stain glass window for my kitchen :)

Now I can focus on catching up on washing (got behind after boys came back from camp), and cleaning. Need my lounge back :)

Country Drive = Cheap Food

Our family driving through the Karangahake Gorge. Love our country :)
DS13 and DS14 have been on a christian kids camp as junior leaders. The camp is at Waihi Beach, a lovely place (beautiful beach). It means having a country drive to and from, but well worth it. The boys had a great time, and we got to pick up some cheap fresh food.
The results from a night of cracking walnut shells.
There was a couple of cute kids selling walnuts on the side of the road. We had to stop and buy a bag. It cost a $10, but well worth it when we almost filled to jars with them. To buy them from the shops and fill the same jars would cost over $28. So plans are to use them for carrot cake and yummy dinners of Bacon and Walnut Gnocchi. Also should make a batch of Afghan biscuits with walnuts on top :)
But that was not all we got. At a fruit and veggie shop heading home (before the city) , we picked up some carrots and onions. 20kg onions for $6.99 and 15kg carrots for $7.99.
At another shop brought 500g of garlic for $5, we love our garlic.
Now I need to prepare some of our carrots for the freezer, to make them last like our broccoli we did. With this type of buying I might be able to get our grocery budget lower than $100 per week. That would be helpful.
Waihi Beach on the day I dropped the boys off to their camp. Could of stayed there for the week myself :)

Was lost with the kids returing to school

It sure has gotten busy at our little house with the kids going back to school. And now I have one of them home for homeschooling.
So DS14 and DS13 are both at high school, catching the bus helps with our petrol costs. At the same time giving them some Independence.
DD11 is back at primary school going into her senior years. She is doing well and making new friends.
DS7 (soon to be 8yrs) is now been home schooled. Gone are the stresses he was having at school. DS7 has Aspergers and needs some extra time and attention. But was not given the support he needed to fit in at school. He better at home, and we are spending some days building the routine we both need to get into.
But I'm still going with the $100 Food Shop :)

Week Three $100 Food Shop

Last week (week two) we spent the whole $100 on food. The main reason being the heat wave we had. The children started drinking more milk because it was chilled in the fridge. So we had a talk with them and filled a large 2 litre bottle with water, that they could have instead. But I also crumbled with the heat and brought a box of ice blocks and a tub of ice cream. So this week I need to get on to making our own ice blocks. We were given some fruit juice which would be perfect for that. I'm still very happy we made it through the week not spending more then our $100 budget.

Now ready for Week Three $100 Food Shop

Menu Plan

Breakfast is cereal or toast
Lunch sandwiches or fritters
Snacks we have chocolate cake (DS13 made for us), 100s & 1000s biscuits, and fruit (apples at the moment)
Dinner
Tuesday: Ratatouille (using our courgettes, and my mum's green pepper) with toast.
Wednesday: Pasta Dinner from our freezer (when we had leftovers from a large pasta dinner)
Thursday: Tray Baked Lamb with Cous cous (another dinner using our courgettes)
Friday: Pumpkin Curry with rice
Saturday: BBQ sausages with salad
Sunday: Chicken Stir fry with rice
Monday: Corned Beef with veggies

Shopping

We are out of white sugar so need to get for making Courgette Jam (yes another thing to use up more courgettes) and our ginger beer. Will also get some flour for baking. Happy to see butter on sale this week 2 for $6, so will stock up our freezer with more. Great for baking :)
Don't need to get milk yet, after talking with kids we are stretching it out again. I will make up some powder milk for baking, have been lapse in that. Need to get more kids cereal, sometime the kids will have 2 bowls for breakfast. I also have to get DS7 pasta, he is hard to feed and this is one thing I don't mind getting. We are working with him to try more but it's slow work. Also on list is cinnamon (baking), eggplant (ours not grown yet), can tomatoes, and chicken breast for stir fry.

I'm excited because of doing this challenge we will have a $671.10 debt paid off next week YAY!
That motivates me to keep going.
We are also using up what we need to from our pantry, fridge and freezer :)

Christmas was Great

Christmas Lunch with family, simple with alot of love. We used compostable plates, bowls and cups (so not to fill rubbish bin, and less dishes to wash)

Our $35 Christmas Ham. We have already had 3 meals from and still going.

Veggies and flowers from our garden. Saw the same bunch of flowers in a florist for $10. I love sunflowers lots, and happy I don't have to buy them. We have to keep an eye on our courgettes now as some are becoming marrows.

Had to share our 3 different types of courgettes. Having them today for dinner, in a quiche and pasta sauce. Love the colours. That middle courgette is a heirloom variety, and our first year trying it.
We also have our 1st cucumber growing, will have to pick soon for salads. Have to prepare our stage 6 garden for planting more veggies.

Today will start to pack up our Christmas boxes, and get them ready for next year. Went to the Warehouse shop today to buy some Christmas items for 60% off. This helps with the Christmas budget alot. But also helps to have less trips to shops in the busy time of year. Being able to buy 8 rolls of wrapping paper for $1.60, and gift tags for .80c is a great saving.

Merry Christmas 2012

Looking forward to today. Having Pancakes for breakfast with my beautiful family (thanks to our dear chickens eggs). Then after time with our dear pets, they need care and attention too. We are going to have a lunch with more family :). The ham is ready, just need to make potato salad. With what other family is bringing it will be a yummy special time. The weather might not be the best. But time with family and friends make the day so special.
I will be able to share photos from our new camera soon. It was brought with Christmas present cash and gift card. Our other camera died on us, thank you camera for 8 years of memories :)
But before I can add photos I have to work out how to get them off the camera and on to the computer.

Hope you all have a blessed Christmas.

Christmas Is Coming

And it's going to be a very simple, old fashion Christmas for us.
With one thing after another happening in the past few weeks, have left us with very little to spend this Christmas.
But no worries, we will make it into a trip back in time to a simpler meaningful Christmas.
Reading this article helped make this choice for this year.
How has Christmas in New Zealand changed in 150 years?
So for us it means family time, picnic lunch (might be inside picnic, depends on the weather)
And presents will be either homemade or low cost. Talking with DH we decide that this year for us and the kids we are going to put our names in a hat and choose one. That is the person we are getting a gift for. Hopefully teaching the kids about the gift of giving.
The kids have been helping me with the Christmas cards, and soon will help with the Christmas baking.
And you know what it's making me excited about Christmas.

Looking forward to making popcorn and watching "It's a Wonderful Life!"with my family :)

We Have Our Christmas Tree Up

This year we are blessed with my parents Christmas Tree. We didn't make it as big as it can be, as we have little space. But it perfect in a pot with sand.
DS7 and DD11 decorated the tree. I'm so proud of them.
DS7 set up the Nativity Set under the tree.
Loving the children's excitement over Christmas season. And thankful that we can do it cheaply. Next the children are going to help me with the cards, maybe we can do a little family newsletter?

Time For Our Christmas Boxes

Today brought the Christmas Boxes out of storage.
We have 3 boxes that have traveled with us for over 10 years.

Lots of memories and Christmas treasures in there.
We have decorations, dvds, books, cards, craft items, music..... alot of helpful items to make this coming season fun. Always good when you have children home with school holidays.
Looking forward to going through the boxes with my children. Or should I say my 2 youngest. DS14 and DS13 (both November birthdays) are typical teens who enjoy from a distance.
I'm making plans for Christmas presents. Will be a simple homemade Christmas this year.

Had a Wonderful Thanksgiving Dinner

Simple table setting. DD11 picked the flowers for the table.

Roast lamb with roast veggies and our courgettes. Was a yummy dinner with alot of fun and talking with my family.

Dessert, simple but was very good :) Can't bet fresh strawberries and fresh cream mmmmm
Very blessed with my dear family :)

Had to add a photo of our 1st courgettes from our garden. Love the colour green :)
We will be having leftover lamb for dinner tonight with a salad fresh from our garden. Lettuce, radish and basil ready to be picked. Will just add tomatoes and carrots which we brought (hope don't have to buy to much more). I'm working on our 4th section of the vegetable garden today, while our dear chickens work on the 5th section. It's cute to have them watch me garden :)

Today is Our Families Thanksgiving Dinner

It a good reason to make sure the dinning table is clean and ready for a yummy dinner. We having a leg of lamb roast with roast veggies and gravy. And some courgettes from our garden, 4 of them! With a dessert of yummy mini Pavlova's with cream and strawberries. It's our families way :)
Can't wait to hear what everyone is thankful for, as well as thanking the Lord we are together as a family safe and blessed.

"So then, just as you received Christ Jesus as Lord, continue to live in him, rooted and built up in him, strengthened in the faith as you were taught, and overflowing with thankfulness."
Colossians 2:6+7

Preparing for Summer

Organising Craft items into boxes and up out of the way in my wardrobe.
Hope having the craft items out of the way will help not have the children make a mess anytime. But have to ask if they can. Helps me to know when there is going to be a craft mess then have a surprise mess on the floor. The colourful boxes are the kids boxes for school reports, certificates etc.
Vac packing the winter sheets away.
Now is the time to get summer sheets on the beds. I vac pack the winter sheets and blankets as I find they store better and save on space. Have also been making sure I have one bag to go to clothing bin or rubbish bin each day. When the bag is full out it goes. Feel like making progress with having the house more clean and organised for the coming Summer Holidays.
Had to share my little $3 find. Have it over my veggie garden. As the veggies are a blessing to us.

See how well they are growing. With some more to plant out soon. Will be moving the chicken run one more time on this veggie garden. Then they will go to our other raised garden bed, and prepare that for more plants.
Our dear neighbour gave us lots of tomato plants I have a couple in big pots, and some waiting to go into the rest of our veggie garden. Looking at the price of tomatoes, I'm so thankful for growing our own. Same with courgettes, we can't afford to buy them in the shops.
Look how well my green courgette plant is growing. I grew this one from seed. See how big the leaves are. This one leaf is 38cm across. Some of the courgettes are going to be ready soon to pick. Can't wait :)
Better go and get another load on in the washing machine :)

Looking Out My Lounge Window

I have something pretty to look at now, as I sit on my couch in the lounge. Some we made as a couple, DH and me. Something that will last longer then a bunch of flowers. It also gives me HOPE and JOY that we can change this garden bit by bit together.
All planted and ready to grow.
Next I have more of the fence to paint, before adding some hanging planters for strawberry plants. And a plant to re-pot beside this planter. Busy, busy but very happy to be outside.

Too Many Clothes

Thought it was about time to got through DD11 clothes. She has just turned 11 year old, and it's  good time to declutter. Boy was I in for a shock.

This is just a small pile of my daughters clothes.
Her drawers were packed with clothes, as well as her washing bag. And I also found more in her wardrobe. Since last years declutter my daughter clothes have multiplied. Maybe they have bred in those drawers. So the decluttering begins. With empty drawers, and a black bag for the clothing bin, the sorting began. Some were easy to sort, some needed to be washed first, and some needed my daughters opinion. But by the afternoon I have almost filled a bag ready for the clothing bin.
How freeing it is.
Now DD11 has more space in her room again.
Another thing that I'm happy about, we don't need to buy her any clothes.

Office and Garden

More like an office now.
The office is becoming a more useful space, and more peaceful. Have a light coming to make the place brighter. Also need to work on the door so have a handle on the other side and even better would be to put a lock on. The seat is very comfortable, but I can't spend all day in  there. We had a moment of fine weather and moved the chicken coop along to the 3 stage of the vegetable garden.
1st stage garden growing well, 2nd stage has soil ready for planting seedlings
Chickens are enjoying some free range time in our garden as we prepare their coop for them. We are pretty happy with how the plants are growing in our veggie garden. Will be having radish's soon and lettuce. Yay salad time :) bring on some more good weather.

Mum's Office

With the wild Spring weather we have been having, gardening was not an option. So our home became my focus and getting that cleaned up and organised. So got to work on my office space.
I need an area for me, and the dinning table is not ideal.
So.....
Here was our junk closet, a large space under our stairway.

Took everything out, and gave the place a quick clean.

Moved a writing desk in. This desk has been in my bedroom, taking space. It wasn't in a good spot and didn't know where else to put it.

This desk was my dear Nan Nan's desk. She left to me after she died, because of the memories we had together with it. Visits to Nan Nan's house and the treasures in this desk she would share with me.
That's all I have done so far, since I want to give careful thought as to what else will go in. I would like to get a small office chair on wheels. I have a pin board, but need a few more pins. I will have my cards kept in here, and stationary. I have a little basket for my bin. I don't want to be buying things for this little office, but reusing what we have.
I will share more photos after I get some more done.

I have been thinking

I'm just recovering from a very bad chest infection. I have not felt so sick in a long time. But it sure does get you thinking when you can't do anything but sit or lie still.

Firstly I'm thankful for my husband who was so helpful with the kids and housework. Even used his day off work to look after me. Then I'm thankful for our kids. DS13 cooked us dinner on Sunday (bean and sausage casserole with mash potato), also made a dessert to have afterwards (self saucing chocolate pudding). And he baked a batch of biscuits for school lunches. DS12 helped with clothes washing, DD10 did clean up jobs all over the house. DS7 did bits here and there.
Now if that would continue more while I'm getting better would be wonderful.

Secondly I'm thankful for our garden. I have really missed not being able to get outside. I'm itching to get more plants planted. But I have also spent time thinking (and researching) things to improve our garden. And now want to get these ideas done. But have been warned to take it easy as I might have a relapse. Ideas like making a planter box with trellis for one side of our garden shed. So when we look out our lounge window, instead of metal garden shed, we can see plants growing. We have all the wood and pieces for it (so it's a free project). I also want to make our own concrete pavers for our garden. Found great plans for low cost ones we can make as a family (cheaper then buying pavers). So we can make a path to the raised garden bed. I also have plans for painting the fence and raised garden bed, have strawberry plants hanging off our fence to make more space for herbs. And many more ideas.

Thirdly I had been doing a part time job to bring in extra cash. But with the tax and time it's not worth the stress. So I'm quiting it to have my time again for my family and home. And I'm excited because it took to much from me, and I'm looking forward it getting it back. It means I can do a real spring clean of this home. And a real organise of our small space. I have an office space I need to create (I have the space but it a mess at the moment). I have to make an area for kids and DH bags to hang. And I need to get my bedroom back to a bedroom not my office at the moment.

And to make it clear why I need an office space. It's a space for home management. Where bills can be sorted, menus planned, school items that are needed where I can see. A place for my to do list, to buy list, to call. But most importantly a place where I can have time out in the house. I need a space that is mine and our dinning table to be a dinning table again.

But now I better head off to bed and try and get some sleep.

Holiday

Today we are having our 1 Day Holiday :)
Each one of us today are relaxing, and doing whatever we feel like doing.
And it's been wonderful :)
Everyone is so relaxed. DH been hardware shopping. Just getting bits and pieces, but having no kids or real work to do, its been a break for him. DS13 is out spending his pocket money. DS12 is playing games with friends, same as DD10. DS7 has loved having time on the PlayStation without others having their say. Me well I have been working on the chicken tractor, just bits here and there.
We will all be back to work tomorrow, but for today PEACE :)

Changes Happening in the Garden

Up early so thought would share our exciting garden changes.
This weekend DH, DS13, DS12 and DH's-dad built us a new raised veggie garden. A wonderful birthday present for DH :)

Laying out the wood. Shadow the Bunny was moved inside, to snuggle with DS7 in the lounge :)

DS12 and DS13 carried the wood in for us.

Progress with poles in the ground, and now levels being added one at a time.

Boys having a lot of nailing practise. The garlic in the orange container still growing well.

Adding the last pieces the capping, where I can sit to garden.

Finish raised bed looking great and giving us a large amount of growing space. We slowly filling with free top soil, and our compost and original veggie garden soil.
We are very happy with the end results of our garden, made even special that is was family built :)
can't wait to get gardening in it.
